The Cabernet Sauvignon grapes are harvested in late August. This is the oldest part of the vineyard, with a low yield of 250 to 400 kg per stremma. After destemming and crushing, fermentation takes place in stainless steel tanks, followed by a long extraction period and aging in new French oak barrels for 15 months.
This is a full-bodied red wine with aromas of blackcurrant and blackberry that harmonize with notes of spices, cedar, milk chocolate, and vanilla. The palate, typical of the variety, is rich, complex, with a full body, robust tannins, and a long finish.
A wine for long aging from 15 to 25 years. It pairs perfectly with beef cuts, spit-roasted meats, and smoked cheeses.
