Fruity, floral, Japanese single malt from the Yoichi distillery on the northernmost main island of Japan, Hokkaido. It is one of the two exciting releases from Nikka that are based on aromas and flavors derived from fermentation and yeast, while the other is the Miyagikyo Aromatic Yeast, a pepper-free whiskey from Yoichi's sister distillery. Drawing on its experience of using and experimenting with various different yeast strains, Nikka fermented this batch of whiskey at a low temperature to acquire a particularly ester-rich character that is said to resemble a good daiginjo sake.
