- Variety: Xinomavro 100%, organic cultivation, clone V6 (45%) and V3 (45%)
- Growing area: Krasna Rodohori, Lakka Giannakochori
- Climate: Mediterranean with continental tendencies
- Soil: Medium to heavy mechanical composition with calcium carbonate
- Planting density: 3000 plants per hectare, 300 plants per stremma
- Yield/plant: 2 to 3.5 Kg depending on the area and clone
- Soil cultivation: Permanent turf, no-tillage
- Vinification: Cold extraction at 9-10°C for 8-10 days, fermentation at controlled temperature (max 29°C)
- Aging: In old French barrels of 500 liters for 8-12 months
