The Manousakis Winery was founded in 1984 and is located near the village of Vatolakkos, in an unexplored place full of wild herbs of Crete. Its creation was based on studies and collaborations with experienced consultants in the field of winemaking.
The wine features a 100% organic Syrah variety. The winemaking is done using classic methods in oak fermenters with controlled temperature. The extraction lasts about 25 days, after which the wine is transferred to barrels made of French and American oak, in proportions of 75% and 25% respectively.
The process includes malolactic fermentation and aging for about 10 months. The barrels are utilized for four years before being replaced.
