The harvest takes place in October, with fresh olives that are pressed on the same day in a certified organic olive mill. Cold pressing ensures the preservation of the nutrients and the aroma of the fruit.

After production, the olive oil is filtered and stored in special nitrogen tanks, maintaining its freshness.

Its taste is characterized by a medium to high intensity fruity aroma, including notes of fresh green olive, green banana, artichoke, and freshly cut grass.

All olive oils are produced under strict environmental regulations, and the Kyklopas family personally oversees every stage of production.
