Eastern Veneto, Conegliano-Valdobbiadene, and Alto Adige are regions where the wines of Santa Margherita Estate are produced. These areas differ in terms of climate and soil composition, yet all three are united by an ancient winemaking tradition dating back to the settlement by the Roman Legions.
Santa Margherita Estate is known for vinifying Pinot Grigio pink grapes as white wine. In this process, the must does not remain in contact with the skins. After gentle pressing, the must is fermented for 10-15 days at 18 °C. Once fermentation is complete, the wine is stored at a controlled temperature of 15-16 °C in stainless steel tanks until bottling.
