Excelsus is a Supertuscan that wonderfully expresses the best tradition of Cabernet Sauvignon and Merlot in the Montalcino region. The two varieties are vinified separately with maceration lasting between 8 and 18 days, and the fermentation is completed in hybrid Horizon steel tanks and French oak.
For the first 12-14 months, they age separately in French oak barrels and then are blended and mature as a cuvée for an additional 8 to 10 months. Afterwards, it ages in the bottle for at least 6 months.
On the nose, it has an intense, dynamic character with complex notes of spice jam, smoke, and coffee. On the palate, its full greatness unfolds, with a full body, sweet tannins, and a long finish that maintains delicate hints of plum, black raisin, and cedar. It is suitable for long aging.
Pairs perfectly with:
- Beef (fillet, ribeye, or braised short ribs), lamb, and game with wine or rosemary sauces
- Hard aged cheeses such as Parmigiano Reggiano, Pecorino Toscano, Grana Padano, Aged Manchego
- Pasta with rich sauces, Ragù Bolognese, porcini or truffle sauce & Risotto with wild mushrooms or wine sauce
- Bitter chocolate (min. 70%) for a bolder pairing
