Castello Banfi was among the seven historic houses that claimed the traditional roots of Piedmont for the production of Italian sparkling wine, and in 1990 they showcased their first project, Spumante Metodo Classico. In 2008, they finally obtained the Alta Langa DOCG designation. All grapes are selected and harvested by hand, followed by winemaking using the classic méthode champenoise.
The first fermentation takes place in tanks, and the second occurs in the bottle with the lees for at least 30 months. It has a straw-yellow appearance and a fine persistent bubble, with aromas of flowers that evolve into complex notes of aromatic herbs and toasted hazelnuts on the nose. On the palate, it has good structure with exceptionally balanced acidity and a pleasant, fresh finish.
Food pairing: Ideal with oysters, raw and cooked seafood, and shellfish. It is also perfectly enjoyed as an aperitif.
