The Blanc de Rose Cuvee R comes from organically certified vineyards located in the village of Fytia. The altitude of 500 meters and the cool breezes during the grape ripening period ensure excellent quality and the preservation of the fruit's finesse. A portion of Xinomavro intended for the Rose de Xinomavro remained in contact with its fine lees for a full 6 years. Then, 1.5 tons of it were removed and replaced with whole clusters of Malagouzia, while the rest was transferred to oak barrels. The fermentation of Malagouzia with the rosé wine that had already been produced lasted a total of 3 years in stainless steel tanks, and after its completion, it remained in contact with the lees for another 2 years. After bottling, it spent another 2 years in the bottle.
