The altitude, the bodies of water, the sandy soil, the low temperatures, the abundant rainfall and snowfall, and the mild and dry summer create a unique microclimate to which the local Xinomavro wine owes its distinctive characteristics.
The cultivation of vineyards in the region of Amyntaio has its roots in antiquity. In 1972, the viticultural zone of Amyntaio was recognized as a zone for producing wines with "Designation of Origin of Superior Quality Amyntaio," and today it is one of the most important viticultural zones in Greece.

- The grapes come from select mountainous vineyards in the Amyntaio zone, older than 50 years.
- The harvest for Xinomavro usually begins in late September.
- A pre-fermentation cold extraction of the grape pulp is applied, along with slow controlled alcoholic fermentation.
- The wine ages for at least a year in oak barrels in the underground cellar and then, after bottling, remains another 12 months in the bottle.
