Assyrtiko white dry natural winemaking, wine produced from the Greek variety Assyrtiko, from young vines. The Assyrtiko variety is cultivated in the mountainous regions of Chios.
- Altitude: 250 – 350 meters
- Harvest: 1st ten days of September
- Yield per acre: 700 – 800 kilograms
- Cultivation: Organic fertilizers are used, and the spraying is done with sulfur and copper four times a year.
- Winemaking: The red winemaking method is followed. Fermentation takes place with the grape must remaining in the tank for about twenty days. No oenological material is added during the winemaking process.
- Color: Although it is a white wine, its color is orange due to winemaking in contact with the grape must.
Food pairing: The natural Assyrtiko can be paired with lemony meat dishes, non-fatty fish, and light pasta.
Tasting: It is a cosmopolitan wine, with a color that touches on orange. The scent of honey and the wild white flowers of mountainous Chios are distinct, while the characteristic acidity of the Assyrtiko variety enhances its personality.
