Chios Vita red dry, two rare Greek varieties, Augustiatis and Agiannitis, that are cultivated on a small area. Altitude: 250 – 350 meters
Harvest: August 20-30
Yield per acre: 800 kg
Vinification: Fermentation takes place in tanks using the cold infusion method.
Aging: It matures and "softens" in oak barrels in the naturally humid and cool cellar of Ariousios, while continuing to age in the bottle until it is opened.
Food pairing: Red meats, game, pasta, and yellow cheeses are an excellent choice.
Storage: Keep in a shady and cool place until the bottle is opened. It is preferable to let it breathe for a while before serving.
Tasting: Its velvety and soft texture, with a deep red color, reveals flavors from the wild herbs of the area.
