“Chiotiko”, Natural Red Dry, 750ml
Variety: Chiotiko Krasero. The unique indigenous variety that produced the famous "Ariousios wine" since antiquity, renowned throughout the known world at the time.
Altitude: from 250 to 350 meters
Harvest: September 20-30 – from vineyards 30 to 40 years old. Harvesting is done manually in 18 kg crates.
Cultivation: Organic fertilizers are used, and spraying is done with sulfur and copper four times a year. They are non-irrigated.
Yield per acre: 700 – 800 kg
Vinification: Vinification begins with the grapes being left in the sun for about a week. Fermentation takes place with the pomace in the tank for about twenty days. No enological material is added during vinification, and cooling and filtering processes are not applied.
Aging: It matures for 18 months in a natural humid and cool cellar, in oak barrels approximately 6 years old.
Food pairing: Recommended to accompany meats with red sauces and pasta with spicy sauces.
Storage: The “Chiotiko Krasero” variety improves with aging, should be kept in a humid and cool place, protected from light.
Tasting: Deep purple color, its taste is enhanced when aerated before serving. Aromas of wild herbs from the mountainous Amani, red fruits (cherry), and vanilla.
