The region: From the famous vineyard in Prosilia Rapsani where Meth' Ymon 7 and Meth' Ymon Opsimo are produced, with a steep slope and mainly schist soils, which give finesse and structure to the wine. The altitude is 650 meters, allowing for slow maturation and excellent tannin ripeness. The vines are approaching 30 years of age, having been first planted in 1991.
The variety and the wine: 100% Limniona, a rare but emerging Greek variety associated with wines of delicacy and silky texture. The producer uses a special production method (fermentation with whole clusters at a rate of 20%) that imparts aromatic intensity and a peppery texture on the palate. He uses old seven-year-old barrels, making the result excitingly charming.
- Extremely aromatic with cherries, notes of violet and spices on the nose intertwined with earthy hints.
- Silky like a caress on the palate, with 13% alcohol and wonderful balance.
- A wine that defines the concept of pleasure.
How to enjoy it: Versatile in taste with gravieras, poultry, but also with fatty fish such as salmon or grouper. Pork with mushrooms would be another amazing combination!
