Organic Chardonnay viticulture

Fermented in small French oak barrels and left on the lees for a period of 5 to 6 months.

Bright yellow-gold with light green highlights. Intense and complex aroma of yellow fruits, citrus, wax, with noble notes of smoke and vanilla. Fresh mouthfeel with good acidity and volume. Long aftertaste and duration.

The label refers to Viola Odorata (violet), a plant with a short rhizome, terrestrial stem, and leaves that form a rosette. In Greece, it grows in meadows and at the foothills of Mount Olympus at an altitude of 700-900 meters. It blooms from April to May, and its flowers are deep purple.
