The Oinogenesis is a winery that started operating in 2007 in the Dramino vineyard. Bakis Tsalikos, the first professional to engage with Dramino wine, took over the Lazari brothers' winery in 1987, bringing knowledge from France. The wine contains 50% Assyrtiko and 50% Sauvignon Blanc. The process involves patient work after the harvest of the Sauvignon in early August and the Assyrtiko in late September. After fermentation, which lasts about 4-5 weeks, there follows a long period on the fine lees, which are periodically stirred to impart flavor richness, body, and aromatic complexity. It belongs to the category of Macedonian Local Wine.
