AOC Chablis Premier Cru

100% Chardonnay

Les Lys is a Premier Cru area in the Chablis wine region of northern Burgundy, southwest of the town of Chablis. The northeastern side of the vineyard distinguishes it from other Premier Cru vineyards in Chablis, creating a Chardonnay-based wine that is more delicate and aromatic while maintaining the classic mineral element of Chablis.

The harvest is done by hand and placed in small boxes of 13 kg. Sorting of suitable grapes. Juice extraction is done with the natural method of gravity, followed by pneumatic pressing for two hours, in order to separate the liquid and solid parts of the grapes. Maturing lasts for 10-13 months in 50% French oak barrels and 50% stainless steel tanks.
