Pale golden color. Dominated by aromas of peach and apricot with hints of quince. There are floral notes of chamomile and jasmine that blend beautifully with herbal aromas. Rich taste with the same stone fruit aromas prevailing. Mouth with balanced acidity and full body, with a good aftertaste.
Served at a temperature of 9-10°C. It is an excellent companion to fish such as sole "meuniere", John Dory, grilled mackerel, and white grouper. It also pairs perfectly with pork with celery, the quintessential Cretan pork with leeks, and certainly with lamb fricassee with lettuce. It goes exceptionally well with chickpea soup with lemon sauce, Sifnos-style slow-cooked chickpeas in the oven, and boiled chickpea salad with herbs.
