Characteristics
Wine with a clear red color and an impressive aromatic bouquet, with dominant notes of freshly ground pepper. It has good acidity and round, soft tannins that fade gently on the palate. Light and harmonious, it is distinguished by its peppery aftertaste.
Vinification
Destemming, crushing, and extraction until the end of fermentation, which lasts 27 days with 2 immersions of the "cap" per day. The fermentation temperature ranged between 20 and 25°C, and immediately after its completion, the wine is led to maturation in 300-liter French oak barrels, remaining with the wine lees for two months and continuing for another 11 months.
