Description

The carefully selected Assyrtiko for its ripeness and health comes exclusively from the "mountainous" vineyard of Pyrgos, which makes it slightly more aromatic than the Assyrtiko from the rest of the island. A peculiarity of most Assyrtikos from Santorini is that, while they are white wines, they have a "red" behavior!

Try aging the GAIAS ASSYRTIKO for 2-3 years, but strictly at a temperature that will never exceed 12°-14°C. The wine will change profoundly. Its minerality will recede, while aromas of fruit and honey will envelop its body.
