RECIPE FOR TSOURÉKI WITH CHIOS MASTIC
Ingredients: 1Kg flour for tsoureki, 300g sugar, 200g butter, 2 sachets of 3 in 1 ELMA MIX FOR TSOURÉKI, 120g lukewarm water, 200g milk, 4 eggs, 1 pinch of salt.
Instructions:
- Dissolve 2 sachets of 3 in 1 ELMA MIX FOR TSOURÉKI in lukewarm water and mix with 150g flour in the mixer with the hook. Cover and let rise for 15 minutes.
- Beat the eggs and salt, add to the risen mixture and mix in the mixer on low speed for 5 minutes.
- Heat milk, 100g butter, and sugar over low heat until the butter melts. Allow to cool and transfer to the mixer with the ingredients of mixture A and mix for 5 minutes.
- Add 850g flour and mix on low speed until absorbed (about 10 minutes), then increase to high for 5 minutes. Then add 100g melted butter.
- Let the dough rise until doubled (about 1 hour), shape tsourekia as desired and place them on a pan to rise for 30 minutes.
- Optionally brush with diluted yolk, sprinkle with almond slices, and bake in a preheated oven at 150°C for 40-50 minutes.
