Katogi Averoff creates a new wine series called INIMA. In the Vlach dialect of Metsovo, inima means heart. For Katogi Averoff, the meaning of the word INIMA is deeper and more substantial. It expresses the soul and captures the mood, enthusiasm, and passion of all the people involved in the production process of the new wine series.
The new wine series "INIMA" includes varieties and vineyards located outside Metsovo, but are particularly cherished by Katogi Averoff. Vineyards they always wanted to utilize and varieties they believe in their potential. The word INIMA means "Soul" in Vlach, signifying the estate's roots and the driving force behind its winemaking philosophy.
The alcoholic fermentation lasts for three weeks at a temperature of 12 to 14°C. This is followed by a three-month maturation of the new wine on the fine lees with 3 battonage per week, in order to gain additional structure and body.
