    Merlot

    It gives wines with soft tannins, medium acidity, and aromas of red fruits (cherry, plum), often with notes of herbs or chocolate. They are rounder and softer on the palate compared to Cabernet Sauvignon.

Excelsus, "ambitious," is a Supertuscan that beautifully expresses the best tradition of Cabernet Sauvignon and Merlot in the territory of Montalcino.

The two grape varieties are vinified separately with maceration lasting between 8 and 18 days, and fermentation is completed in hybrid Horizon steel tanks and French oak. For the first 12-14 months, they age separately in French oak barrels and then are blended and mature as a cuvée for an additional 8 to 10 months. After that, it ages in the bottle for at least 6 months.

On the nose, it has a bold, dynamic character with complex notes of jam, spices, smoke, and coffee. On the palate, its full glory unfolds, with a full body, sweet tannins, and a long aftertaste that maintains subtle hints of plum, black currant, and cedar. It is capable of long aging.

Food pairing: Ideal with red meats and aged cheeses.
