Description

C.A.I.R. is one of the oldest winemaking units in Greece and the largest producer of Natural Sparkling Wine. It was founded in 1928 by Italian entrepreneurs. Since 1999, C.A.I.R. operates in modern facilities covering an area of 140,000 sq.m.

The Company offers a rich range of bottled still and sparkling wines, all of excellent quality, as confirmed by many international distinctions. C.A.I.R. is one of the few wineries in Greece that produces natural sparkling wine using the traditional French method of secondary fermentation in the bottle.

  • 30% Assyrtiko
  • 40% Athiri
  • 30% Chardonnay

The grapes are carefully hand-selected, and fermentation takes place for 1 year in the bottle. After the second fermentation, a transfer method is used to create the blend and extraction with Kozani Crocus. A unique feature of Chimera is the infusion with saffron, the most expensive spice in the world, with the Kozani Crocus from Macedonia scoring high marks in quality characteristics.
