Description

The Estate Techni Wine cultivates Xinomavro, the premier red variety of Northern Greece, in the soils of Drama. Strict cultivation and careful winemaking have contributed to the creation of a wine that balances finesse and strength, delicacy and volume, aging and freshness.

A Xinomavro that puts an end to the dilemmas about modern or traditional approaches to the variety, as it has elements of both styles, while the balance between finesse and volume makes it equally versatile at the table.

Winemaking

Pre-fermentation cold extraction for a few days to transfer noble phenols and structure from the grape to the must, before the "appearance" of alcohol. Fermentation takes place in stainless steel tanks with regular recirculations for the extraction of color and tannins. After malolactic conversion, the wine is transferred to 225-liter French oak barrels, 50% of which are new, for the final stage of 12-month aging. Light filtration and bottling.
