Hetero, created by Maria Tamiolaki and Dimitris Mansolas, describes their endeavor as 'Gypsy Winemaking', meaning they produce wines in different regions of Greece selected for their uniqueness and winemaking value. Here we have a stunning Assyrtiko from organically cultivated vineyards in Domokos, which ferments with native yeasts.
It has the following characteristics:
- It remains for 5 months with its lees.
- 50% of the wine is placed in second-use oak barrels.
- It combines the austerity of the variety with friendly characteristics when cultivated outside of Santorini.
