Description

Tyrnavos, located at the foothills of Mount Olympus, is one of the key wine-producing regions of Greece and has been part of the PGI Tyrnavos wine-producing zone since 1990. Domaine Zafeirakis focuses on sustainable farming practices to create wines with respect for people and the environment. The vineyard's management is carefully designed with the aim of minimal intervention and maintaining the biodiversity of the environment.

Cultivation has been organic since 2005 and is certified by Biohellas. Domaine Zafeirakis cultivates over 120 hectares of vineyards, primarily in the areas of Palaiomylos and Kabulaga, with native Greek varieties such as Limniona and Malagouzia as well as international options like Chardonnay and Syrah.

The production of white wines includes:

  • Cooling of the grapes at 4°C for 24 hours
  • Fermentation in stainless steel tanks and/or 1200L and 2400L barrels
  • Staying on the lees for several months without the addition of yeasts
  • Aging in new and/or old 1200L and 2400L barrels

The classic red winemaking method is applied for wines from the Limniona variety in 3000L and 5000L oak barrels. Extraction lasts 17-24 days, with malolactic fermentation occurring in 1200L, 2400L, 3000L, and 5000L oak barrels. Aging continues in new and old barrels and/or amphorae and after bottling, it ages in the bottle for another 12 months.
