Unique and unconventional rosé wine. Apostolos Thymiopoulos goes against the rule that says rosés should only be drunk fresh, creating a mature rosé from Xinomavro that is already in its second year and justifies its producer.

Its color is deep pink. Its aroma is mature and reminiscent of red fruit jams, sun-dried tomato, caramel, and sweet spices. Its taste is full, with lively acidity, minimal tannins, and a caramel aftertaste.

  • The Rose de Xinomavro has a good structure with tannic substance and crisp acidity, to which the 3-month stay in an old oak barrel contributes. A rosé wine that calls for food and is not just for an aperitif. I believe that aging it for 2 to 3 years will elevate it. Recommended.
