Description

This wine pushes the boundaries of how the Argyros Estate understands the environment of Santorini. The Assyrtiko is selected from very old vineyards, biodynamically cultivated, at least 150 years old, in Pyrgos, with very low yields. It ferments in stainless steel tanks at low temperatures and ages there for 30 months with lees. At the same time, 25% of the wine ages for 12 months in large French oak barrels and then remains for the rest of the time in stainless steel tanks. The Argyros Estate Cuvee Evdemon Santorini focuses on the architecture of the structure in the mouth and needs several years in the bottle to reveal all its characteristics. It is a wine with an exceptional aging potential of more than 15 years.

Tasting

Lemon color with green highlights. On the nose, its mineral character is distinguished, saltiness, with aromas of lemon, green apple, yeast aromas, and toasted bread, with nicely integrated oak and vanilla aromas. On the palate, it has crisp acidity with a pleasant oily sensation, mineral notes, and saltiness with lemony flavors.

Accompanied

Ideally accompanies shellfish, grilled fish such as large fish like snapper, sea bream, sea bass, pagrus, meats like lamb and goat, mushroom risotto, pasta with seafood.

Served

Ideally served at 10-12°C. Although white, you can decant it into a carafe for 20-30 minutes to enhance its complexity.
