In the 100% organic vineyards of 200 acres owned by the Thymiopoulos family in the Naoussa zone, Mr. Thymiopoulos applies biodynamic cultivation methods, allowing the vines to adapt to the environment on their own.
Mr. Apostolos Thymiopoulos's involvement with wine is a result of family tradition, as his father and grandfather were vine growers. The Thymiopoulos family produced wine for the first time when Apostolos, a student of oenology, decided with his brother Theodoros, a student of plant production, to focus exclusively on producing wine from the Xinomavro variety.
XINOMAVRO NATURE: From a vineyard planted 54 years ago at the edge of the village of Trilofos. The grapes are 50% "whole cluster," and fermentation occurs with indigenous yeasts. Extraction lasts for 30 days. No sulfite is added at any stage of winemaking. Maturation in 500-liter second-use French barrels for 6 months.
