The altitude, the water bodies, the sandy soil, the low temperatures, the heavy rains and snowfalls, the mild and dry summer create a unique microclimate to which the local wine Xinomavro owes its distinctive characteristics.
The cultivation of vines in the Amyntaio region dates back to antiquity. In 1972, the Amyntaio viticultural zone was recognized as a zone for the production of wines with "Appellation of Origin Amyntaio of Superior Quality" and today it is one of the most important viticultural zones in Greece.

The grapes come from selected vineyards in Amyntaio.
The harvest for Merlot usually begins in the first ten days of September, and for Syrah and Xinomavro at the end of the month. The grapes are destemmed and vinified separately. Pre-fermentation cold extraction of the grape musts and slow controlled alcoholic fermentation are applied. Aging: 18 months in oak barrel.
