Dry Wine, P.G.I. CRETE, from the varieties Chardonnay 50% and Vidiano 50%. The grapes come from the Dafnes area at an altitude of 350 m, with the vineyard's toponym Xerolia. The soil is limestone and the yield ranges from 300 to 400 kilograms per acre.
Half of the blend is fermented in a tank and the other half in a 1-year-old barrel (medium toast). A secondary fermentation (malolactic) follows, both in the barrels and in the tank. After blending, the wine matures for about 4 months in the barrels, is filtered, and then bottled.
Sohoro can age in the bottle for 4-5 years.
