The philosophy of Lustau has remained the same since its establishment in 1896: the pursuit of the highest quality in order to offer the market the widest and best range of sherry. Lustau has been honored and recognized with many awards, such as in 2011 when it was named "Best Spanish Producer." In 2012, it was the most profitable winery in Spain and the 7th worldwide. Lustau's winemaker, Manuel Lozano, was named the best winemaker of the year seven consecutive times.
Sherry is a protected term in the terminology of Jerez wineries. It means that additional alcohol is added to facilitate its extensive aging process in American oak barrels. The wines are classified according to their age as Finos and Manzanillas, with a total alcohol content of 15º, and as Olorosos, with a minimum alcohol content of 17º.
- BIOLOGICAL AGING: During the storage of the wine at 15º, a layer of yeast (flor) forms, isolating the wine and protecting it from oxidation.
- OXIDATIVE AGING: Without the protection of the "flor," the wine will begin the long oxidation process, evident in its dark color.
