The history of the winery has its roots in 1952, and the turn towards modern, quality production began in 2004, with the first and most important step being the renewal of part of the old vineyards and the planting of new ones. Some were replanted with Assyrtiko, as well as rare varieties of Santorini - such as Aidani and Mavrotragano.
PDO Santorini. 100% Assyrtiko. Grapes origin: From a single vineyard of century-old Assyrtiko vines located in one of the best terroirs of Santorini, Pyrgos. Spontaneous fermentation with natural yeasts in the presence of skins just as in red winemaking (skin contact method). 14 days total maceration and then the wine remains with the whole lees for 10 months.
Natural winemaking without any addition or intervention during fermentation and maturation, except for a minimal amount of sulphites only during bottling.
