The history of the Winery has its roots in 1952, and the shift towards modern, quality production began in 2004, with the first and most important step being the renewal of part of the old vineyards and the planting of new ones. Others were replanted with Assyrtiko, as well as rare varieties of Santorini, such as Aidani and Mavrotragano.
The modern approach to work in the vineyard—the most important part of wine production—has resulted in the creation of a modern and continuously evolving winery that constantly wins significant awards.
PDO Santorini:
- 90% Assyrtiko and 10% Athiri and Aidani
- Mainly old vineyards from various areas of the island.
- The majority comes from vineyards in the areas of Pyrgos, Exo Gonia, and Megalochori, while a portion comes from Akrotiri, Emporio, and Fira.
- Separate fermentation tanks for each variety at controlled temperatures.
- The final blend is decided based on the profile of each year and matures with fine and whole lees for at least 5 months.
