Description

The "Paolin" comes from a relatively cool and elevated vineyard called Basarin in Neive, a cru renowned for its minerality. Its fresh fruit character makes it the softest Barbaresco of the estate.

The grapes are hand-harvested from about 45-year-old vineyards and fermented in concrete tanks after a 40-day maceration. They mature in Slavonian oak barrels and age for 30 months in the bottle.

Elegant aromas of rose, cherry, and sweet spice compose the nose profile, while on the palate the aromas evolve into more mature fruits such as raspberry and currant, framed by notes of cedar and spices combined with a tempting mineral streak. The tannins are abundant yet firm, and the acidity provides a sense of elegance.

The best Barbaresco wines need 10-15 years to be ready for consumption and can age for several decades. For optimal elegance, decant for at least one hour.

Food pairing:

  • Perfect with roasted meats
  • Lamb
  • Grilled meats
  • Pasta with rich sauces and truffle
  • Aged cheeses
