Description

Winemaking / Aging:

Destemming, absence of a press, pre-fermentation cold maceration in a controlled environment, alcoholic fermentation at graduated temperatures. The wine remains on its lees for 4 months with periodic stirring. Aged in the bottle for at least 4 months.

Tasting characteristics:

Bright ruby color in the glass with crimson and purple highlights. On the nose, fresh aromas of red fruits with plum and cherry as if you just picked them. Strawberry in a more jam-like form, currant, and blackberry complement the fruity side of its character. From here on, a slight animalistic sense of bacon and leather, hints of graphite and licorice complete the beautiful ensemble.

Medium-bodied, just as fresh as the nose, with fine fruity aromas supported by soft tannins and balanced acidity. Cherry, strawberry, and currant take the lead, with licorice complementing the pleasant and easy-to-drink ensemble.

The good-length fruity aftertaste leaves cherry in the mouth for a while.

Harmony:

Enjoy it on its own as an aperitif, pair it with pasta with light red sauces, salmon burgers, grilled red meats, or a juicy moussaka.

Ideal enjoyment at 15°C.
